FOUNDER / CEO


Founder and CEO of Frankie Solarik Holdings,  parent company of BarChef, BarChef Events, PREQUEL & CO. APOTHECARY and COMPTON AVE. Frankie has achieved international acclaim as a pioneer and champion of the immersive and experiential cocktail movement through the use of immersive design, contemporary and modernist techniques in his compositions.

Named by The New York Times as a "Legendary Experimentalist", Frankie’s artistic expressions have evolved from the kitchen and bar to conceptualizing some of Toronto’s most immersive cocktail experiences. The intentions and philosophy of creating emotional and evocative experiences for guests transcends from beyond the glass and plate to the guest experience.

Frankie is also the author of the best-selling book 
The Bar Chef: A Modern Approach to Cocktails and was chosen as judge for NETFLIX's international Smash Hit DRINK MASTERS as well as being profiled in major international magazines and on television including features on CNN and Top Chef Canada.

He continues to push the envelope on the definition of the cocktail experience.

His approach is unique, his research impeccable, and his goal is to inspire others worldwide to adopt a completely new approach to cocktail culture and dramatically expand on the immersive and experiential cocktail movement. 

KURT

TISSERA

DIRECTOR OF OPERATIONS


Kurt Tissera began his journey in the hospitality industry as an expediter at the grand opening of Cactus Club Cafe in Toronto. Demonstrating exceptional dedication and skill, he spent nearly two years with the company before transitioning to Flock, Chef Cory Vitiello's restaurant on Harbord Street. Starting as a server, Kurt quickly climbed the ranks to become General Manager within two years. During his tenure at Flock, he played an instrumental role in curating the wine list and designing the cocktail menu, showcasing their extensive knowledge of wine and flavour pairings.

In 2019, Kurt achieved his longstanding goal of joining the prestigious BarChef as General Manager. His relentless pursuit of excellence and unwavering commitment to exceptional customer service earned him a well-deserved promotion to Director of Operations in 2021. In this role, Kurt has continued to contribute to BarChef's ongoing success as a leader in the world of mixology and fine dining, leveraging their comprehensive experience in the hospitality industry to further enhance the establishment's already stellar reputation.

As a strong believer in the collective strength of a team, Kurt actively listens to and relies on the input and expertise of each team member to drive continuous improvement and innovation within the business. This inclusive management style has not only contributed to their personal success but has also played a pivotal role in the ongoing achievements of the establishments they have been a part of.

DIRECTOR OF CULINARY


Introducing Lionel Duke, Director of Culinary whose journey is a testament to determination, talent, and a relentless pursuit of innovation. Hailing from the town of Wasaga Beach, Lionel's culinary odyssey began at a young age when he started his culinary career as a dishwasher—a humble beginning that would shape his exceptional trajectory.

Equipped with a diverse skill set and a keen eye for detail, Lionel began making waves in the culinary world. He showcased his talents in renowned kitchens, working with top chefs and embracing opportunities to experiment with novel ingredients and techniques. Lionel's dedication to perfection and his relentless pursuit of innovation led him to develop his own unique culinary style, characterized by bold flavors, meticulous presentation, and an unwavering commitment to quality.

One of the pivotal moments in Lionel's career came when he had the opportunity to work alongside the meteoric talent of Frankie Solarik. Solarik's avant-garde approach to mixology and culinary arts resonated deeply with Lionel, igniting his passion for abstract art and molecular gastronomy. Under Solarik's tutelage, Lionel's culinary identity blossomed, and he became a trailblazer in the realm of innovative gastronomic experiences.

Lionel's love for abstract art permeates every aspect of his culinary creations. With each dish, he masterfully combines colors, textures, and flavors to craft edible works of art that not only tantalize the taste buds but also engage the senses on a visual and emotional level. His molecular gastronomy-driven approach allows him to deconstruct traditional cocktails & dishes and reimagine them in ways that surprise and delight. 

As a Director of Culinary, Lionel leads with an unwavering commitment to pushing the boundaries of culinary exploration. He spearheads menu development, constantly challenging the norms and creating immersive dining experiences that defy expectations.

GIANLUCA

PASSUELLO

DIRECTOR OF BEVERAGE


Gianluca, a creative and passionate mixologist, joined the BarChef team in 2019, bringing with him a wealth of culinary and mixology experience gained from working in prestigious establishments in Dubai, St. Barthélemy, and Milan. With a passion for pushing the boundaries of mixology and a dedication to crafting truly memorable cocktails, Gianluca has established himself as a visionary leader in the industry.

With a deep understanding of the interplay between flavours, textures, and presentation, Gianluca's culinary approach to mixology sets him apart. He believes that progressive ingredients and techniques can elevate the cocktail experience, creating unique and immersive sensory journeys for patrons. His cocktails are a harmonious blend of classic recipes and avant-garde elements, resulting in an unparalleled drinking experience that captivates the senses.

Gianluca's journey in the world of mixology began in Dubai, where he honed his skills at renowned bars and restaurants. The cosmopolitan nature of the city exposed him to a diverse range of flavours and cultures, influencing his innovative approach to mixology. This formative experience shaped Gianluca's philosophy towards leadership and mentorship, as he recognizes the value of embracing diversity and nurturing talent.
